The history of dried fruit is as old as man, with reference
found even in ancient Egyptian writing. Spurred by the need
to preserve the harvest and to provide fruit throughout the
year, the practice spread to all the ancient empires, through
medieval times and to the western hemisphere via the Spanish
Missions.
Apricots, Pears, Peaches, Apples, Bananas, Pineapple, Prunes
and Raisins are dehydrated or dried to two different moisture
levels, low moisture (3 to 5%) and regular moisture (20 to
24%). When dried to these moisture levels, they retain all
the vitamins and minerals but will last for long periods of
time without spoiling.
Dried fruit is used by the food industry (Bakery, Cereal,
Ice Cream, Yogurt, Baby food) and directly as a healthy snack
by the individual consumer.
